Offshore Banana Pancakes

If you need a morale-boosting breakfast for your crew, look no further. This banana-based pancake recipe is easy to whip up, filling, and a tasty warm treat! Perfect for when sailing offshore!

We often find fruit is plentiful onboard, so oldened ripe bananas are ideal for this recipe! The beauty of pancakes is you can serve them up with whatever you please, they’re delicious served warm with a handful of berries and creamy fromage frais but also a yummy snack with a spread of jam and butter! (if you’re feeling indulgent)

Ingredients 

  • 1 large ripe banana, peeled
  • 2 medium eggs, beaten
  • 2 level tbsp self-raising flour
  • Cooking spray or vegetable oil
  • 100g fat-free natural fromage frais, to serve

Method

  1. Mash the banana in a bowl with a fork until smooth, then stir in the eggs and the flour.
  2. Spray a small, non-stick, frying pan with cooking spray or use a small amount of vegetable oil and place over medium heat.
  3. Pour a 12th of the pancake mixture into the pan and cook for 1 minute, or until the base is golden brown. Flip over the pancake and cook for a further 1-2 minutes, or until golden and cooked through. Keep warm while you make 11 more pancakes. Serve 3 pancakes per person with whatever you have on board. Perfect with a handful of berries and fromage frais, or dust over some sugar, lemon, or cinnamon.
